Dukkah-baked Lamb with Orzo

Instructions

1.

Preheat the oven to 160°C / 140 Fan oven. 

2.

  • 3 garlic cloves
  • small piece of ginger

Finely chop the garlic cloves and ginger.  

3.

  • 3 tbsp. dukkah mix
  • 1 ½ tsp. tomato paste
  • 1 tsp. salt
  • 1 tsp. Ralahami black pepper

In a small bowl, mix together the garlic, ginger, dukkah mix, tomato paste, salt, and pepper.

  • 1 tbsp. olive oil

Lather some olive oil onto the lamb shoulder. 

Evenly apply the prepared dukkah mix onto the lamb shoulder.

Place the seasoned lamb in a lightly oiled oven dish.

Pour 2 cups of water into the oven dish.

Cover the dish with a kitchen foil and roast the lamb for 3 hrs. 

7.

After the 1 hr has passed, beginning preparing the ingredients to make the Orzo pasta.

  • 1 onion
  • 3 garlic cloves
  • 4 green chilies
  • 4 mushrooms
  • 6 small tomatoes

Finely slice the listed ingredients.

  • 1 tbsp. olive oil

In a large wok, heat 1 tbsp. of olive oil and simmer the onions for 1-2 minutes.

Then add the garlic and green chilies and mix the ingredients together and simmer for another 2-3 minutes.

  • 1 tsp. salt
  • 1 tsp. Ralahami black pepper
  • 1 tsp. chilli flakes

Add salt, 1 tsp. of Ralahami Black pepper and 1 tsp. of chilli flakes and mix to combine.

  • 2 tbsp. dark soy sauce
  • 3 tbsp. tomato paste

Add the dark soy sauce and tomato paste mix to combine.

Add the mushrooms and tomatoes and mix to combine.

  • 2 tbsp. sweet chilli sauce
  • 1 tsp. Ralahami Ground Cinnamon

Add the sweet chilli sauce and Ralahami Cinnamon and mix. 

After about 2 minutes- remove from heat.

  • 750g Orzo pasta

Cook the orzo pasta in boiling water for 10-12 minutes, and check that the pasta is cooked and is a soft texture.  

Strain the water of the cooked orzo pasta. 

13.

Add the cooked orzo pasta to the wok and mix to combine with all the spices, mushrooms and tomatoes.  

14.

At the last 30 minutes of cooking the lamb, evenly spread the mixed orzo pasta to the lamb roasting dish. 

Cover the oven dish with kitchen foil and bake for the remaining 30 minutes.

Evenly slice the lamb shoulder and serve with the orzo pasta.
