DUKKAH MIX
An Egyptain Condiment

Dukkah gets its name from the Egyptian Arabic word for ‘to crush’ or ‘to pound’, which is how the Dukkah mix is made.
Dukkah is a fragrant Egyptian condiment, made from ground nuts, seeds, spices and herbs and used as a dip or topping.
Traditionally the spiced pulverized Dukkah mix is put in a bowl next to a bowl of olive oil and used to dunking bread (first in the oil, then in the Dukkah mix). The mix can also be used for coating fish, chicken or lamb before grilling.

Dukkah Mix Ingredients
- 200g pecans
- 200g walnuts
- 200g almonds
- 100g hazelnuts
- 150g pistachios
- 100g coriander
- 100g cumin seeds
- 100g cardamon pods
- 10g clove buds
- 20g Ralahami ground cinnamon
- 100g Ralahami black pepper
- 50g dried chilli
Utensils
- Wok
- Wooden Mixing Spoon
- Spice Grinder
- Grinding Mill
- Glass Jar
Instructions
1.
De-shell the pistachios.

- 200g pecans
- 200g walnuts
- 200g almonds
- 100g hazelnuts
- 150g pistachios
- 100g coriander
- 100g cumin seeds
- 100g cardamon pods
- 10g clove buds
- 20g Ralahami ground cinnamon
- 100g Ralahami black pepper
- 50g dried chilli
Add all of the nuts and spices to a large wok.

Roast over medium heat- till fragrant (about 10 minutes).

Remove from heat and set aside to cool.
5.
Pulse the Dukkah mix using either a spice grinder or a grinding mill.
6.
Store the pulverised Dukkah mix in an airtight container, or a glass jar and store in a cool and dry place.
