PARIPPU VADE

Vada is a savoury fried snack, with origins from India. Alternate names for vada include wada, vade, vadai and is also described as fritters, cutlets, doughnuts or dumplings.
Parippu vade is a popular street food and tea time snack in Sri Lanka. It is an easy to make savoury snack, which is also vegan, vegatarian, gluten-free, and low-carb friendly.

Ingredients
- 1260g yellow split peas
- 11 tsp. chili flakes
- 5 tsp. fennel seeds
- 4 tsp. salt
Extras
- Vegetable Oil for frying
Utensils
- Food processor
- Deep fryer
- Large Bowl
- Large Mixing Bowl
- Colander
Instructions
1.
- 1260g yellow split peas
Soak the yellow split peas overnight.
2.
After 24 hrs- drain the water of the yellow split peas.
3.
Using a food processor, pulse the split peas till a crumbly paste.
Add the pulsed split peas to a large mixing bowl.
4.
Mix together cumin seeds, chilli flakes, and salt with the pulsed yellow split peas and combine well.
5.
Give the Vade mixture a little taste and if necessary add more salt and chilli flakes to cater to taste preference.
6.
Heat oil in a deep fryer or a deep pan.
Drop a few crumbs of the yellow split pea mixture and if the oil sizzles, the oil is heated.
7.
Line a colander with kitchen paper towels.
8.
Using your hands, take a small handful of the split pea mixture and shape it into a circular shape with a 1cm thickness.
9.
Fry the parippu vade (lentil patties for 5 minutes, till brown in colour.
10.
Unload the fried parippu vade to the colander lined with kitchen paper towels.
11.
Enjoy the parippu vade with a cup of tea.
12.
Once the fried parippu vade has cooled, store the vade in an airtight container and can be stored in the fridge for up to 2-3 days.
Re-heat the vade in the oven at 120°C (100°C fan oven) for about 5 minutes.
